At Mitahara, the act of eating food is a serious affair. Our chef believes in conscious eating - being mindful and deliberate about what, when, why and how we eat. It's not about counting calories and hard-and-fast rules, but rather a balanced diet that nurtures not only the body, but also the mind, senses, and spirit. Food, after all, is a source of energy and strength. It's sustenance and radiance. The very concept that "food is medicine" is special to our chef and Mitahara. Food is the primary preventative tool, as well as the first step in bringing the mind and body back into balance. Although we often say, "You are what you eat, "our chef would modify that to say, "You are what, how, when, and why you eat." Your well-being results not only from the types of foods you eat, but also from your state of mind, the environment, the time of day, and the season in which you consume them.
